The other week after reading a healthy eating book, I decided it would be a good thing to remove any form of meat or fish from my diet for an entire week.
Crazy hey, very much so. I have always believed that meat should constitute every meal, from breakfast to late night supper and everything in-between.
But then after gently recalling my usual diet, it’s not necessarily so.
If we have cereal in the morning, or just toast and jam, so for breakfast so long I don’t have bacon of sausages or last night’s left over kebab, then I would do right.
Lunch time seem a little tricky as the usual office lunch is A Sandwich with crisps/chocolate and a drink.
So to find a sandwich without ham, chicken or prawns. quite hard actually, but thanks to the baguette kitchen, i could specially design my own sandwich.
And then I fell in love with a brie sundried tomato avocado and rocket baguette. Nice.
Dinner was easier, from mixed mushroom spaghetti, to jollof rice and home made coleslaw. Mixed leaf salad with croutons, roast sweet potato and spiced lentils, and one evening had some rice and sweet potato falafel from Leon

So quick thinking and hey presto vegetarian sausage roll.
So a quick dash to Waitrose, (it’s closer than Sainsbury)
And found some very interesting ingredients.
Vegetarian Sausage roll
Cauldron Falafels 200g
Jus Roll puff pastry sheets
Half a teaspoon of smoked paprika
2 tablespoon of tomato ketchup.
A little fresh milk
Combine the sausages, falafels paprika and tomato ketchup and mixed well almost kneading it in the process.
Open up the puff pastry and an one edge of the length of the pastry put the sausage mix, and roll, then using a pastry brush or the tip of your finger brush the entire sausage roll with milk.
Place on a non stick over tray. Into a pre heated over and cook for about 25min at 180 degree centigrade or until golden brown.
Serve with tomato ketchup.
